Czech cuisine is very diverse, and every person can find something for themselves. Today I will introduce a recipe that is quick and easy to cook even in a less equipped kitchen.

Sour lentils (Čočka na kyselo in Czech) - traditional food for New Year's lunch. It was believed to provide enough money. But it is also popular during the year. Each housewife has her original recipe. I will introduce a very basic recipe to you. Both vegetarians and meat-eaters can enjoy this food.

What you will need:

  • 250 g lentils (brown or green)
  • Salt
  • Pepper
  • 1-2 tablespoons of plain flour
  • Vinegar

Side dish:

  • 1 small onion
  • 1 egg
  • Sausage

  1. Pour the lentils into the pot. Pour water approximately 1 cm above the level of the lentils. Leave for a few minutes and then remove the dirt from the surface. Then rinse the lentils two more times through the filter under running water.

  2. Pour the lentils back into the pot and pour water about 1 cm above the layer of the lentils. Add a pinch of salt. Cover the pot with a lid and let it simmer while occasionally stirring on a low flame. Let it cook slowly for about 20 - 25 minutes. Watch out - cook the lentils until soft, but do not boil them into a mash.

  3. To thicken the mixture, pour a full spoon of plain flour into a mug and pour a little water. Mix them well into a smooth, medium-liquid mash. Then pour the content of the cup through a filter into the boiling lentils and mix well and cook for about 5 to 7 minutes. If you have a blender, you don't have to use flour to thicken it, but you can also reduce the lentils by removing one scoop, mixing it into a smooth porridge and then pouring it back into the pot. This meal is a healthier option.

  4. Taste the lentils. Add salt and pepper for a better taste. Add a pinch of sugar to enhance the flavour. Slightly acidify it by adding a teaspoon of vinegar. Mix well. If the lentils are soft, and turn off the stove.

  5. Finally, chop a small onion. Heat up the oil in a pan and let the onion fry until it is golden, stirring it occasionally. Prepare the egg according to your liking. It can be prepared as a fried or a hard-boiled egg. If you like meat, you can quickly fry sausage in a pan.

  6. Scoop the lentils on a plate. Sprinkle with fried onions, add an egg, and possibly sausage.
